black bean & avocado pasta salad
so its kinda hard to eat well in the winter. i mean after valentine's day.. and new year's... uh, and christmas and thanksgi-- well you see the pattern, and its not very nice to waistlines. so i tried to make something healthy last week. and here it is:
black bean & avocado pasta salad(adapted from Cooking Light)
3/4 cup uncooked pasta
1 cups cubed tomatoes
1/2 avocado, cubed
1/4 cup onion, chopped
2 Tbsp fresh cilantro (or 3 pinches dry)
1/2 can black beans, rinsed
2 tsp grated lime rind
1 tsp white or apple cider vinegar
2 Tbsp olive oil
3/4 tsp minced garlic
3/4 tsp salt (optional)
1/8 tsp red pepper flakes (optional)
cook pasta. in large bowl, mix tomatoes, avocado & black beans. combine all other ingredients in separate bowl.
when pasta is cooked, drain and run under cold water until cool. add to tomato mixture and add dressing mixture. toss well and serve w/lime wedge if desired.
yield: 4-5 servings
its better to eat the salad the same day because the avocado starts to turn brown if exposed to air - which makes the salad look unappealing (yet still tasty). also, don't pulverize the onions because you're too lazy to chop them or you whole salad will taste like onion and you'll have to give it all away to your garbage disposal boyfriend.
your salad will have more tomatoes - i only had one roma tomato left and i usually use 2-3.
